How to buy cookware wholesale for a restaurant or hotel

Buying cookware wholesale is a different job from retail - you spec a range, in quantity, that has to stay consistent and re-orderable. Here is how to choose a supplier and what to ask for.

Wholesale vs retail: why it is a different purchase

Buying cookware for a professional kitchen is not the same as buying a pan at retail. You are buying a range, in quantity, that has to look and perform the same across every station, every shift and every outlet - and stay available to re-order as pans wear. That points you toward a wholesale supplier or distributor rather than a shop: someone who carries the full range in depth and can supply the same spec again months later.

So the decision is less about a single pan and more about a supply relationship: the right shapes and sizes, in commercial quantities, from a source you can go back to.

A common procurement mistake is drifting away from that relationship over time. The opening order comes from a wholesale supplier, but every replacement afterwards is picked up at retail - whatever the local shop has that week. Within a year a three-site café group can be running five or six different pan models, with no two outlets working from the same equipment. If a quick audit shows more than a fifth of your pans are off-spec odd ones, it is usually time to consolidate back to one supplier and one spec sheet.

Decide your range before you talk quantities

Start from your menu and your stations, not a catalogue. Work out which pan shapes each station actually uses and in which sizes, then how many of each a full service burns through.
