Cast Sahan
The cast sahan is the pan a Turkish breakfast service runs on - a shallow, wide dish that cooks eggs, menemen or sucuk and then goes straight to the table still holding its heat. Casting suits this job particularly well: the heavier body keeps the dish hot in front of the guest for longer than a thin pressed pan, which is the whole point of a cook-and-serve piece.

It has two short side handles rather than a long one, so it stacks tightly in a prep fridge and sits neatly on a breakfast table or a pass. The interior carries a speckled granite-effect non-stick coating for clean release on fried and scrambled eggs, and the outer wall has the same faceted black finish as the rest of the cast line. The base is rectified - machined flat - for even contact on a solid burner. Available in 18, 20 and 22 cm; these pans are not induction compatible.
